macheesmo.com has a terrific tutorial here for how to make homemade breakfast sandwiches just like McDonald's Egg McMuffin. I don't think my kids would eat it on an english muffin, so I'm substituting toasted wheat bread. Super easy! You could also do this just to make a bunch of eggs.
