Homemade Beef Jerky

Ingredients:
  • 1 1/2 to 2 pounds flank steak
  • 2/3 cup Worcestershire sauce
  • 2/3 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ground black pepper (add 2 teaspoons if you like spicier beef jerky)
  • 2 teaspoons onion powder
  • 1 teaspoon Liquid Smoke
  • 1 teaspoon red pepper flakes (optional)
Directions:
  1. Trim the flank steak of any excess fat, place in a Ziploc bag and freeze for 1 to 2 hours to firm up.
  2. Remove the steak from the freezer and thinly slice the meat, with the grain, into long strips.
  3. Place the strips of meat and the marinade ingredients into a large, 1-gallon Ziploc bag.  Place the bag in the refrigerator for 3-6 hours, turning several times to evenly distribute the marinade.
  4. Remove the steak and pat dry on paper towels.
  5. Place the strips on your food dehydrator trays, careful that none of the pieces are touching or overlapping.
  6. Turn the dehydrator on, and run for approximately 10-12 hours.
  7. When the meat is fully dried, place into an airtight container for 2 to 3 months in a cool, dry place.
Good luck keeping it for 2 to 3 months....ours is usually gone within a few days!
