Likely Story!

I can relate!  I have sooooo been here.  Done that.  My little Soozy was quite the little hellion in her younger days - she once ATE her way THRU our sofa.  I dreaded coming home from work every night for fear of what I might find.  She's ruined carpet, furniture, blinds, shoes.  Thankfully, it was only a phase (that lasted about a year).  We stuck it out, repaired, replaced, and just loved the dog.  She turned into one of the sweetest little ladies you'd ever want to meet.

That's One Way To Put It


After several days of taking it easy, and being house-bound, the little guys are getting just a little bit stir crazy!  They know how to push each other's buttons and really delight in it.  Hopefully the weather is good tomorrow, as I think a trip to the park on our bikes may be just what they need!  Are your kids driving you up the wall yet?  I love having extra time with mine, but I seriously don't remember having this much energy when I was a kid.  I used to love sitting in front of the TV with cartoons and a big bowl of cereal.  These guys?  Not so much.  They require constant entertainment.  Can you play a board game with me?  Will you read to me?  I'm bored.  What can we do now?  Here are some of the things overheard in the Park household recently:
  • Jack (the cat) is staring at me.  It's really starting to make me paranoid.
  • Can I borrow some of your underwear and bra to put on my Angry Birds pillow.  (REALLY?!?!?)
  • I don't think it's so much that you have to be NICE all year long, I think you just have to TRY......right, Mom?  I'm hoping that's how it is.
  • Don't you think it's a little creepy that Santa's watching you all the time - even when you're pooping?  That creeps me out.  (Ummmm.........can I get back to you on that one?)
  • Do I have to brush my teeth even though I don't have to go to school today? (yep!)
  • My tummy hurts (x50) - I'm thinking maybe, just maybe, it's all the candy?
  • Where do you even get coal, anyway?  Do they sell it somewhere?

My poor hubby has been running the house for the last week or so, not just cooking and cleaning, but playing nursemaid to me.  Poor guy!  Little did he know that there would be very little "vacation" going on during his three week vacation!  He's also installed a new garbage disposal, taken apart the laundry room to detect a water leak under the foundation (our surprise Christmas present), and been just an all-around good guy.  I don't know what I'd do without him!  
I apologize for the long break from blogging.  I thought the doctor's appointment last week and the shot of penicillin would have put me on the path to wellness, but I was sorely mistaken.  Nope, I was still feeling like a dog 5 days later (sore throat, ear ache, coughing, congested and super-de-duper tired).  Went to the doctor again today and got a second course of antibiotics and some codeine cough medicine (yeah!).  Hopefully by tomorrow it will be a new ME!  I am anxious to get back to my routine, including blogging.  I haven't checked emails since Friday, and had well over 400.  That will teach me to get sick!

An Unusual Birthday Present

Well, my suspicions were correct.  I've got strep.  And tonsillitis and an ear infection.  So I got an early birthday present - a big, thick needle full of Penicillin in my butt.  Ouch.  Stick a fork in me, folks.  I'm done.  I'm headed to bed.  You may not hear much from me in the next few days.  I hope you have a FANTASTIC Christmas with your loved ones!

God Bless Us Every One

I have been a total Scrooge this Christmas season.  We did not get our tree up until last week, and only at the insistence of my husband (he put it up on the sly while I was out running errands).  I just was super-stressed and not at all in the Christmas Spirit.  NOW (like 30 minutes ago), I think something flipped the switch.  I'm guessing it was the fact that my little man-child has returned from the Midwest Clinic in Chicago.  
For weeks, I stressed about the trip, the details, the packing, the shopping for suits & ties (really).  It made me a nervous wreck.  And it's hard to be all "Christmas(y)" when you're worried sick.

  1. What if he forgot something REALLY IMPORTANT (like his french horn)
  2. What if he got mugged/shot/sick
  3. What if he got homesick (what if he didn't)
  4. What if his plane went down (yeah, I went there a lot)
  5. What if someone was mean to him or hurt his feelings (even at 15 I still worry about this)
I could go on and on, but I think you get the picture.  NONE of those things happened.  He actually ended up having the time of his life.  Can you say Chicago Symphony?  Can you say Blue Man Group?  Dining on the 95th floor of the Hancock Center?  Experiencing Chicago at Christmas time - complete with snowfall?  Yep, he did all those things, and more.
From the pictures I have been poring over, he looks like a fine young man (which, of course he is) who is "big doggin' it" in the Big City.  He knew what fork to use!  He wore a suit or sport coat every single day of the 5 day trip (even on the airplane).  He makes me so very proud, despite the (copious) amount of grey hairs he has given me in the last month.
NOW, let's get this Christmas party started!  I'm ready.  All my chicks have come home to roost.  The nest is full and warm.  It's all good.  :D

OK - these HAVE to be THE. CUTEST. CHRISTMAS. COOKIES. EVER.  Seriously - they're WAY off the cuteness chart.  Cuteness squared doesn't even begin to address how stinkin' adorable these are.  I found these over at Penguin Stamper's blog.  She doesn't have a recipe, or instructions, just this oh-so-cute pic.  But if you have even the SLIGHTEST amount of creativity you can do this.  It's just Nutter Butter cookies, melted white chocolate baking bark, mini chocolate chips, red sugar and red M&M's.  Even I could do this.  And if I can, you most certainly can!  I love this for taking to holiday parties.  You will be a hit, I guarantee it!

Christmas Thumb Prints

I stumbled upon Squidoo today, and they've got all sorts of CUTE ideas & examples of thumbprint art.  There are themes for all major holidays.  These make great boredom busters.  My kids love to do them.  It's also a good way to distract them before dinner.  That always seems to be the witching hour at our house, when they are at their most cranky, and I have the least patience.  They sit at the table and make thumbprints, while I fix dinner.  At the five minute warning, they wash their hands up, tape their artwork to the wall, and we eat!

These little babies look right up my boy's alley.  They will LOVE these for an after school snack.  My teenager will probably eat a dozen in one sitting.  Dashing Dish has this great recipe posted on her site.  The crust is made from whole wheat wraps, so I'm callin' this one healthy!  (That means I can eat a dozen too!)

I happen to have pork chops on hand, and am on the hunt for something new to make.  This looks like it will fit the bill quite nicely, thank you very much!  This is Rock Recipes' Double Crunch Honey Garlic Pork Chops.  She dipped the whole chop in the Honey Garlic sauce.  I'm thinkin' we'll do a it as a dippin' sauce instead.  I don't know why, but if there is something that the kids can dip their food in, they'll eat it.  Whatever works.  Looks really tasty!

Printable Traffic Jam (Rush Hour) Game

Zach is home sick today, and already going stir crazy.  He's done his homework, watched WWE wrestling, terrorized the pets, read, colored, and is bored again.  So.....he got the bright idea to draw his own knock-off version of the Rush Hour game.  Being the enterprising (lazy) mommy that I am, I ran to the computer and googled.  Within 60 seconds I arrived at Dr. Mike's Math Games For Kids website.  It is a treasure trove of educational games (i.e. boredom busters) and has this super handy printable version of the Rush Hour game, which he calls Traffic Jam.  LOVE it!  There are over 600 (yeah, you read right!) different puzzles to print out and solve.  Zach has been happily playing puzzles for the last 20 minutes.  He's occupied (maybe even learning a little something), and I have a few moments to myself.  Best of all, it didn't cost me one thin dime.  Check it out.  Print it out for your kids next time they're bored, sick, or just lookin' for something fun to do.  (You'll enjoy this game too!)  Thanks, Dr. Mike!

Salted Caramel Popcorn

This stuff is seriously, seriously addictive.  The picture does not do it justice.  We used to make homemade popcorn balls every year from an old family recipe.  They're super tasty, but a LOT of work, and tend to get hard as a rock if you don't eat them within a week or so.  Last year, we ditched those to try this new recipe out.  It's a keeper!  EVERYBODY raves about it.  I think the secret is the kosher salt.  It's also really easy to make, and not terribly time consuming.  I would highly recommend it.  Not just for holiday baking, but also just for a special treat for movie night.
INGREDIENTS:
10 cups oil-popped popcorn (Pop 1/3 cup kernels in 1 tablespoon of oil - do not use microwave or air popped corn.  It won't be as good).
1 1/2 cups coarsely chopped pecans, toasted in a 350 degree oven for 7 minutes
1/2 cup (1 stick) salted butter (the real stuff!)
1 cup light brown sugar
1/4 cup light corn syrup (Karo)
1 teaspoon vanilla
1/2 teaspoon baking soda
1 1/2 teaspoons kosher salt
DIRECTIONS:
  1. In a small pot over medium-low heat, melt the butter with the brown sugar and syrup.  Stir until the mixture comes to a boil.  Boil for 5 minutes, stirring constantly.
  2. Remove from heat and add the vanilla, baking soda and salt.  Stir vigorously.  The mixture will expand and get very foamy and light.
  3. Pour it over the popcorn and pecans, and use a wooden spoon to stir it quickly, gently and well.
  4. Spread the coated popcorn mixture out on a pair of large rimmed baking sheets.
  5. Heat in a 200 degree oven for 20-30 minutes.

Holiday Baking Extravaganza 2011

Yesterday was our Annual Holiday Baking Day.  We started at 10:00AM, and were done by 4:00, which is record time for us (usually it's more like 5:00 or 6:00).  Without a doubt Holiday Baking is my personal favorite family tradition (and yes, we have a lot to choose from).  I just love it.  And every year, it gets easier and easier because the kids get bigger and bigger.  I remember many, many years of baking with one baby on my hip, a snoozing niece laying on the floor with a bottle, diaper breaks, meltdowns.  Those days are long gone.  Now the kids are actually a valuable resource instead of a distraction.  My two youngest nieces did ALL of the chocolate making by themselves (peanut butter cups & peanut clusters).  We made a BOATLOAD of Chex Mix, Salted Caramel Popcorn (which I will post the recipe for later), these new Christmas Swirl Cookies (which were a big hit), butter cookies, cutout sugar cookies (which the kids decorated - then "auctioned off" to each other) and Magic Pretzels (which are literally almost gone already).  Here's a few things I learned yesterday:

  1. I am not good at math - despite meticulously going over all the recipes to figure out what we needed, and a marathon shopping trip - we STILL had to send my Dad and Tim to the store (not once, not twice) THREE TIMES to pick up supplies.  Oops.
  2. Zachary has an unconventional way of decorating Christmas cookies, to say the least (for some reason he added popcorn on top of all his cutout cookies)!
  3. Never leave fresh baked holiday goodies out unattended when you have a teenager in the house (Sam literally ate almost ALL the magic pretzels while the rest of us slept).
  4. Annual family traditions are a must for a close knit family.  I have no doubt that after my Mom, Aunt, me and my sister-in-law are long gone, our children will carry on the tradition of Holiday Baking with their kids.  
  5. Not only are we making yummy treats, we're making memories.  And that's what it's all about, folks!
