My family loves pancakes, but I don't love standing over the stove flippin' cakes until the batter's gone. Maybe I'm just lazy. Yeah...probably so. That being said - I really like the idea of using pancake batter and various "fixin's" in a muffin tin and baking 'em. Such a simple and brilliant idea I wonder why I never occurred to me! I LOVE that you can make several varieties at once. Heck, the kids can even personalize their own based on whatever they've got a hankerin' for!
